German Apple Cake (return to top)
Makes 12 servings
- 3 eggs
- 1 c vegetable oil
- 1 tsp vanilla
- 2 c sugar
- 2 c flour
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 4 c thinly sliced, peeled apples (about 4 large apples)
- 1 c walnuts, chopped
Grease and flour a 9- by 13-inch baking pan.
Beat eggs, oil and vanilla until foamy. Add sugar, flour, cinnamon, baking soda and salt; blend well.
Stir in apples and nuts. Pour batter into pan. Bake at 300 degrees 1 hour, or until crusty on top. Toothpick inserted in center should come out clean.
Note: Excellent with cream cheese frosting.
Freezes well.
Cinnamon-Apple Cake (return to top)
The cream cheese in the batter give this cake lots of moisture. Because it’s so tender, use a serrated knife for cutting.
- 1 3/4 cups sugar, divided
- 3/4 cup (6 ounces) block-style fat-free cream cheese, softened
- 1/2 cup butter or stick margarine, softened
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 cups chopped peeled apples (about 2 large)
Cooking spray
Preheat oven to 350°.
Beat 1 1/2 cups sugar, cream cheese, butter, and vanilla at medium speed of a mixer until well-blended (about 4 minutes). Add eggs, 1 at a time, beating well after each addition; set aside.
Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking powder, and salt. Add flour mixture to creamed mixture, and beat at low speed until blended. Combine 1/4 cup sugar and cinnamon. Combine 2 tablespoons of the cinnamon mixture and apple in a bowl; stir apple mixture into batter. Pour batter into an 8-inch springform pan coated with cooking spray, and sprinkle with remaining cinnamon mixture.
Bake at 350° for 1 hour and 15 minutes or until cake pulls away from the sides of pan. Cool cake completely on a wire rack, and cut using a serrated knife.
Note: You can also make this cake in a 9-inch square cake pan or a 9-inch springform pan; just reduce the baking time by 5 minutes.

Dutch Apple Cake (return to top)
- ¼ lb. Butter/margarine
- 1 c. sugar
- 2 eggs
- 1 t. vanilla
- 1 c. sour cream
- 1 ¾ c. flour
- ½ t. salt
- 1 t. baking soda
- 1 t. baking powder
- 3 c. cored and sliced apples
Sugar mixture:
- ½ c. sugar
- 1 T. ground cinnamon
- ½ t. ground nutmeg
Cream butter and sugar. Add eggs and vanilla, beating mixture well.
Sift together remaining dry ingredients for batter.
Add alternately the sour cream and dry ingredients. Mix between additions.
Pour batter to depth of 1 inch into greased 8 X 8 baking pan.
Sprinkle 6 T. of sugar mixture evenly over batter.
Arrange the apple slices closely together to cover the batter.
Sprinkle remaining sugar mixture over the apple slices.
Bake at 375 for 40-45 minutes.
Rose’s Apple Cake (return to top)
- 1 ¾ c. sugar
- 3 eggs
- ¾ c. oil
- 2 c. flour
- 1 T. baking soda
- 1 t. cinnamon
- 1 t. salt
- 1 t. vanilla
- 2 c. apples, chopped
- 1 c. walnuts, chopped
Mix in order given.
Bake in a 9 X 13 greased and floured pan at 350 for 45 minutes.
No icing needed
Apple Crumb Cake (return to top)
- ½ cup, plus 1 T. butter/margarine…softened
- 3 c. apples (sweeter variety), peeled, quartered, and sliced crosswise
- 1 ¾ c. flour
- 1 tsp. Baking powder
- ¾ tsp. Salt
- 6 oz. Cream cheese (regular or low fat)
- 1 ½ c. sugar
- 4 eggs
- 1 tsp. Vanilla
Crumb topping:
- ¾ c. flour
- ¾ c. sugar
- ¼ tsp. Cinnamon
- 1/8 tsp. Salt
- 6 T. Cold margarine/butter, cut into small pieces
Preheat oven to 350
Grease and flour a 9-inch square baking pan
Melt 1 T. Butter/margarine in a medium-sized skillet.
Add the apple slices and saute over medium-high heat, stirring often, for about 2 minutes.
Place apples on a plate and set aside to cool.
Sift together flour, baking powder and salt into a medium bowl.
Cream together remaining butter ( ½ cup) and cream cheese in a large bowl.
Gradually add in sugar and eggs and vanilla, blending well.
Add flour mixture, a little at a time, until all is well-blended.
Pour batter into pan.
Make topping:
Combine dry ingredients in a large bowl.
Add butter/margarine and mix ‘till you form crumbs.
Sprinkle half the crumbs over the batter.
Layer the apples on top of the crumbs.
Top with remaining crumbs.
Bake for 50 to 60 minutes, until sides pull away from the pan, and an inserted toothpick comes out clean.
Cool before serving.
Spice Cake with Cider Glaze (return to top)
The glaze boosts the apple essence of this cake without making it overly sweet.
Cake:
- 3 1/2 cups all-purpose flour (about 15 3/4 ounces)
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 teaspoons apple-pie spice
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1 cup sugar
- 1/4 cup butter, softened
- 2 tablespoons walnut oil or canola oil
- 4 large eggs
- 1 cup reduced-fat buttermilk
- 1 cup apple cider
- 1/2 teaspoon vanilla extract
- Cooking spray
Glaze:
- 1 cup apple cider
- 1 teaspoon sugar
Preheat oven to 350°.
To prepare cake, lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (through salt) in a large bowl; stir with a whisk.
Combine 1 cup sugar, butter, and oil in a large bowl; beat with a mixer at medium speed until light and fluffy (about 5 minutes). Add eggs, 1 at a time, beating well after each addition. Combine buttermilk and 1 cup cider in a small bowl. Add flour mixture and cider mixture alternately to sugar mixture, beginning and ending with flour mixture. Stir in vanilla. Pour into a Bundt pan coated with cooking spray. Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack.
To prepare glaze, combine 1 cup cider and 1 teaspoon sugar in a small saucepan over medium-low heat; bring to a simmer. Cook until reduced to 1/4 cup (about 15 minutes). Drizzle glaze over each serving of cake.
Chopped Apple Cake (return to top)
- 4 c. chopped apples
- 1 ½ c. sugar
- 2 eggs
- ½ c. oil
- 2 c. flour
- 2 t. baking soda
- 1 t. cinnamon
- 1 t. salt
- ½ c. chopped nuts
Mix apples and sugar. Let stand for 5 – 10 minutes.
Beat eggs and add oil. Add to the apple/sugar mixture.
Add remaining ingredients and mix.
Bake at 325 in 9 X 13 greased and floured pan, for 45-50 minutes.
Remove from oven and cover with glaze:
4 T. lemon juice mixed with 1 c. confectioner’s sugar
Upside Down Coffee Cake (return to top)
Preheat oven to 350
Cake batter:
- 2 c. all purpose flour
- 1 c. sugar
- 3 t. baking powder
- 1 t. salt
- 1/3 c. softened butter
- 1 c. milk
- 1 egg
-Beat in large mixer bowl at low speed for 30 seconds, then at medium speed for 2 minutes
Streusel:
- ½ c. chopped nuts
- 1/3 c. packed brown sugar
- ¼ c. all purpose flour
- ½ t. ground cinnamon
- 3 T. firm butter
-Combine until crumbly
Apple mix:
- ¼ c. butter
- ½ c. packed brown sugar
2 medium apples, thinly sliced
-Heat butter in square pan (9X9X2) until melted
-Sprinkle with brown sugar
-Arrange apples in pan
Pour batter over apples in the pan, and then sprinkle them with the streusel
Bake about 50 minutes, or until a pick comes out clean
Immediately invert on to serving plate and let set.
Harvest Coffeecake (return to top)
- 1/3 cup butter
- 1 cup sugar
- 2 eggs
- 1 tsp. Vanilla extract
- 1 ½ cup flour
- 2 tsp. Baking powder
- ½ tsp. Ground nutmeg
- ¼ tsp. Salt
- 2/3 cup milk
- 4 apples, peeled, cored, and finely chopped
- 1 T. Ground cinnamon
- 1 T. Sugar
- ½ cup walnuts
In large bowl, beat together butter and sugar. Blend in eggs and vanilla extract
In separate bowl, combine flour, baking powder, nutmeg, and salt. Blend this mixture into butter mixture, along with milk.
Stir in apples
Pour into 9-inch square pan lightly coated with vegetable oil/cooking spray
Combine cinnamon, sugar, and walnuts…then sprinkle evenly over batter in pan
Bake at 375 degrees for 25 to 30 minutes, or until cake tests done
Jewish Apple Cake (return to top)
- 3 c. sifted flour
- 2 c. sugar
- 4 eggs
- 3 t. baking powder
- 5 apples, thinly sliced (Liberty/Gold Rush)
- 2 t. cinnamon
- 5 T. sugar
- 1 t. salt
- ¼ c. orange juice
- 1 c. oil
- 1 tsp. Vanilla
Beat all together except apples, cinnamon and sugar in a small bowl.
Mix apples, cinnamon and sugar together in a separate bowl.
Put ½ of the battered mix into a greased and floured bundt pan.
Add ½ of apple mix. Add last of batter mix. Top with the rest of the apple mixture.
Bake in a preheated 350 oven for 1 ½ hours. Allow to cool in the pan, without inverting it while it cools.
When cool, remove it to a plate.
Applesauce Gingerbread (return to top)
- 1 c. butter or margarine, melted
- 1 c. brown sugar
- ½ c. molasses
- 2 eggs
- 1 c. applesauce
- 2 c. all-purpose flour
- 2 t. baking soda
- 2 t. ground ginger
- 1 t. ground cinnamon
Preheat oven to 350
Grease and flour a 9 X 13 in. baking dish
In medium bowl, beat together the margarine, sugar and molasses
Beat in the eggs, one at a time, then beat in the applesauce
Add dry ingredients and stir well to combine thoroughly
Pour batter into baking dish, and bake for 35 minutes, or until an inserted toothpick comes out clean
Serve warm or cold, topped with whipped cream or vanilla ice cream, if desired
Makes about 18 servings
Spiced Apple Cake (return to top)
- 1 ½ c. flour
- 1 t. baking soda
- ½ t. cinnamon
- ½ t. nutmeg (optional)
- ½ t. ground cloves
- 1/8 t. salt
- ¾ stick butter or margarine
- ½ c. sugar (or ¼ c. more, if you prefer a sweeter cake)
- 1 egg, lightly beaten
- 1 c. applesauce
- ½ c. raisins
- ½ c. chopped walnuts
- 4 medium tart apples, peeled, cored, and cut into thin wedges
Preheat oven to 350
Mix together dry ingredients
In a separate large bowl, beat together the sugar, butter/margarine, and egg.
Slowly stir in the dry ingredients and applesauce, mixing until smooth.
Stir in raisins and nuts.
Pour batter into a greased 8 X 8 baking pan
Press the apple wedges into the batter in rows.
Sprinkle a bit of sugar over the apples
Bake for about 1 hour, until golden brown, and an inserted toothpick comes out clean
Serve warm

- 1 c. sugar
- 1 c. packed dark brown sugar
- 1 ½ c. vegetable oil
- 3 eggs
- 1 tsp. Vanilla
- 3 c. peeled and chopped apples
- 1 c. chopped nuts or raisins
- 3 c. flour
- ½ tsp. Baking soda
- 1 tsp. Baking powder
- ½ tsp. Salt
- ½ tsp. Cinnamon
- ¼ tsp. Ground cloves
- ½ tsp. Mace or nutmeg
Preheat oven to 350
Grease a tube pan or two loaf pans
Combine sugars, oil, eggs and vanilla; mix thoroughly.
Sift together dry ingredients, then add to the egg-sugar mixture. Mix until just combined.
Fold in nuts/raisins and apples. (Batter will be very thick)
Put batter in pan(s).
Bake in tube pan for 60 to 80 minutes. Bake loaf pans for 45 to 60 minutes.
Cake is done when inserted skewer or toothpick emerges clean.
Cool in pan for 10 minutes, then release to a serving plate or glaze plate*
Optional Glaze:
Note: This glaze is quite sweet and sets to a solid sugar coating. If you prefer more of a coffee cake, you may be happier to omit the glaze.
- ½ c. margarine or butter
- 1 c. packed brown sugar
- ¼ c. milk
- 2 Tbsp. Bourbon or cider (optional)
In medium saucepan, combine ingredients.
Over medium temperature, stir continually until butter melts and mixture is combined. Heat to a boil, stirring occasionally.
Boil for 3 minutes.
Remove from heat, and add bourbon or cider.
Spoon warm mixture over warm cake.
*For a more ‘polished’ appearance, glaze the cake on a paper plate or aluminum foil… Then, once cooled, carefully remove the cake to the serving plate.
Applesauce Cake (return to top)
- ½ c. shortening
- 1 c. sugar
- 1 egg
- 1 c. applesauce
- 2 c. flour
- 1 tsp. Baking soda
- 1 tsp. Baking powder
- 1 tsp. Cinnamon
- ½ tsp. Allspice
- ½ tsp. Nutmeg
- ¼ tsp. Cloves
- ¾ c. nuts
Preheat oven to 350
Cream together shortening and sugar, then add egg and beat well.
Add applesauce.
Sift together dry ingredients and the add to the mixture.
Add nuts and mix well.
Pour batter into greased 8 inch pan and bake at 350 for 50 – 60 minutes.
Can be frosted when cooled, if desired…or serve plain or with whipped cream.
Sweet Apple Quick Bread (return to top)
- 2 c. flour
- 1 c. sugar
- 1 tsp. Baking soda
- ½ tsp. Baking powder
- 1 c. apples, peeled and chopped
- ½ c. butter, softened
- ½ c. milk
- 2 T. orange peel, grated
- 1 T. corn syrup
- 2 eggs
- ½ c. chopped nuts
Preheat oven to 325.
Blend all ingredients except nuts.
Beat for 3 minutes, then add nuts.
Pour into greased loaf pan.
Bake at 325 for 50 to 60 minutes or until toothpick comes out clean.
Remove from pan to cool.
Fruity Apple Cake (return to top)
- 4 c. grated apples (5-6 medium)
- 1 ¼ c. sugar
- 2 t. cinnamon
- 1 t. nutmeg
- 1 t. salt
- 1 c. whole wheat flour
- 1 c. unbleached flour
- 2 t. baking soda
- 2 eggs
- ¾ c. vegetable oil
- 2 T. honey
- 2 t. vanilla
- 1 ½ c. raisins and/or dried cherries
- ½ c. chopped nuts
Preheat oven to 350
Mix together apples, sugar and spices, then add the flours and baking soda.
In separate bowl, beat the eggs until creamy, then add the oil, honey and vanilla…blend well.
Fold the liquid mixture into the apple/flour mixture.
Stir in the raisin/cherries and nuts.
Pour batter into greased and floured 9 X 13 pan and bake for 45 to 50 minutes.
