Judy Rogers’ Roasted Applesauce

Chicken with Applesauce (return to top)
(for slow cooker)

  • 4 boneless, skinless chicken breast halves
  • Salt to taste
  • Pepper to taste
  • 4-5 T. oil
  • 2 c. applesauce
  • ¼ c. barbecue sauce
  • ½ t. poultry seasoning
  • 2 t. honey
  • ½ t. lemon juice

Season chicken with salt and pepper. Brown in oil for 5 minutes per side.
Cut up chicken into 1” chunks and transfer to slow cooker.
Combine remaining ingredients. Pour over chicken and mix together well.
Cover and cook on high for 2-3 hours, or until chicken is tender.
Serve over rice or noodles.

Apple-Honey Dressing (return to top)

  • 1/3 c. sugar
  • ¼ t. dry mustard
  • ½ t. paprika
  • ½ c. smooth applesauce
  • ¼ c. honey
  • 3 T. lemon juice
  • 1 T. vinegar
  • ¼ t. grated lemon rind
  • 1 t. celery seed
  • ½ c. oil

Combine all ingredients except oil in a bowl. Mix well.
Add oil slowly, beating thoroughly.
Shake or beat well before serving
Makes about 1 ½ cups.

Applesauce Oaties (return to top)

  • 1 ¾ c. quick oats
  • 1 ½ c. flour
  • 1 t. baking powder
  • ½ t. baking soda
  • ½ t. salt
  • 1 t. ground cinnamon
  • ½ t. ground nutmeg
  • 1 c. packed light brown sugar
  • ½ c. sugar
  • ½ c. softened butter
  • 1 egg
  • ¾ c. applesauce
  • 1 c. Semisweet chocolate chips
  • 1 c. raisins
  • 1 c. chopped walnuts

Preheat oven to 375
Combine oats, flour, baking powder, soda, cinnamon and nutmeg
In a separate bowl, combine sugars. Add butter and beat to form a grainy paste.
Add egg and applesauce, and blend until smooth.
Add the flour mixture, chocolate chips, raisins and walnuts. Blend until just combined.
Drop by tablespoonfuls onto lightly greased baking sheet, 2 inches apart.
Bake 12-14 minutes, or until light brown.

Apple and Raisin Sauce for Ham (return to top)

  • 1 c. applesauce
  • ½ c. apple butter
  • ½ c. raisins
  • ½ c. maple syrup

Combine all ingredients in a saucepan and simmer until bubbly. Makes 2 ¼ cups.

Applesauce Bars (return to top)

  • 2 ½ c. flour
  • 1 c. sugar
  • ¼ t. baking powder
  • 1 ½ t. baking soda
  • 1 ½ t. salt
  • ¾ t. cinnamon
  • ½ t. cloves
  • ½ t. allspice
  • ½ c. vegetable shortening
  • ½ c. water
  • 16 oz. Applesauce
  • 1 egg
  • ½ c. chopped nuts
  • 1 c. chopped raisins
  • Caramel Frosting (below)

Sift dry ingredients into a large mixing bowl.
Add shortening, water, applesauce, and egg. Beat for 4 minutes on medium speed.
Fold in nuts and raisins.
Pour into greased and floured 9 X 13 pan.
Bake 30-40 minutes in preheated 350 oven.
Cool, then frost and cut into bars.

Caramel Frosting:

  • ¼ c. butter or margarine
  • ½ c. firmly packed brown sugar
  • 3 T. milk
  • 1 ½ c. confectioners sugar

Melt butter and add brown sugar.
Boil for 1 minute, stirring constantly.
Cool slightly, then stir in milk.
Gradually add confectioners sugar – beating until it’s a good consistency for spreading.

Applesauce ‘Recipe’ (return to top)
Making applesauce is easier than you think…and so yummy to eat warm from the stovetop! It’s easy to experiment and try different ways of making it.
Just select the apples you want then peel, core and quarter them.
Put them in a saucepan with just a bit of water or cider so that they don’t scorch.
Simmer until the apples are soft, about 20 to 30 minutes for 6 to 10 apples.
You can process them in a blender or food processor, or just mash them with a fork or potato masher! Easy!
Now, the fun part…you can add to the sauce any way you like (if you want to!)…cinnamon perhaps…or honey, or maybe brown sugar or even a bit of ginger.
If you make too much, you can freeze the extra. My favorite memories of Mom’s sauce was eating it when it was only half-thawed…and enjoying crunching on the icy sauce chunks!

Another Applesauce-Making Idea (return to top)
Sharon writes: “Making applesauce in a crock pot is like having a pot of simmering herbs that make the house smell good; except, you can eat this potfull! I start on low and don’t even add water, as the apples give off moisture. If I want to speed up the process, I turn the temp to high…but usually do not as the aroma is such pleasure.”
(Serves 8)

  • 10 apples, peeled and sliced
  • ½ c sugar
  • 1 T ground cinnamon

Combine ingredients in slow cooker. Cover and cook on low for 8-10 hours
(Yummy over oatmeal or pancakes!)

Gingered Applesauce (return to top)

  • 2 T. lemon juice
  • 4 sweet-tart apples (1 ½ lbs. Total), peeled, cored, and cut into chunks
  • 1/3 c. water
  • 3 T. sugar (more or less, to taste)
  • 1 ½ t. finely grated peeled fresh ginger

Toss apples and lemon juice in a large saucepan. Add water, sugar, and ginger, and bring to a boil
Reduce heat to med/low, cover, and cook for several minutes, until apples are tender
Remove from heat, mash, and taste…adding more sugar if needed
Serve warm
Makes about 2 cups

Microwave Chunky Applesauce (return to top)

  • 6 cooking apples Ground nutmeg and or cinnamon, if desired
  • 1/3 c sugar (or to taste)

Peel and core apples. Cut into small chunks. Place in a microwaveable 2 quart dish. Cover with waxed paper. Cook on HIGH for about 8 minutes, stir several times. Add sugar (you will know how much to add or not add, if you take a small taste-some apples are sweeter than others and need very little sugar). Cook on HIGH another 2 minutes. Let stand covered for 5 minutes. Cool on a rack. Sprinkle with nutmeg and/or cinnamon, if desired. Makes about 2 cups.
